Want to impress someone with some fancy breakfast in bed? Or just impress yourself?
I suggest you make this.
For two people.
Here’s what you need:
1 cup arugula
1 medium yam
coconut oil (or other oil for pan saute)
Here’s what you do:
Peel the potato and cut into 1/2 inch cubes.
Heat up a saute pan to medium heat with some coconut oil (or other oil). Saute the yam cubes until they are fork tender.
While the yams are cooking, pour 1/4 cup balsamic vinegar into a different saute pan. Bring the vinegar to a simmer and let the glaze sit for 5-10 minutes. Note: To know if the balsamic glaze is done, stick the tip of a spoon into the liquid and if it coats the spoon, it is done. Also, keep the heat on medium-low the whole time. Balsamic vinegar is very sugary and can burn if left on too high of a heat.
Once the yams are done, transfer them to a bowl. Using the same warm pan, crack in two eggs and cook them to over easy.
Once the balsamic glaze is thicker in consistency, transfer to a separate bowl to let cool.
To plate, put half of the yams on a plate, add half of the raw arugula and then top it all with an over easy egg. Lastly, drizzle with some balsamic glaze, grind a little salt on top and enjoy. Do the same for the second plate and enjoy this easy, fancy breakfast with your person.
