My mom and I love anything coconut and anything warm and cozy in the morning, and together, we made this: one of our new favorite breakfasts.
The cool thing about it is that you probably already have most of it in your pantry. Those types of recipes are the best, am I right? So next time you need to meal prep a hearty breakfast for the week., or have guests over in the morning, serve this with a nice cup of coffee and you will have instantly have the coziest morning.
Total Preparation/ Cooking time: 20- 25 minutes
Serves: 3-4 servings
Gluten free, soy free & dairy free
3 cups oats
1 cup dried coconut flakes
2 Tablespoons hemp seeds
1 cup raw mixed nuts
1 banana, sliced
2 Tablespoons honey
1 can full fat coconut milk
1/2 cup water
Preheat oven to 400 degrees F.
In a 9x9 baking pan, mix together the oats, hemp seeds, and nuts.
Then, spread the mixture out evenly and top with the banana slices.
In a separate bowl, whisk together the honey, coconut milk and water.
Pour over oat mixture.
Let the oat mixture sit for about 10 minutes in the fridge to let the oats soak in the liquids.
Take out of the refrigerated and stir the oat mixture just to make sure everything is wet.
Lastly, bake for 20 minutes.
To serve, top with dollops of coconut butter (like shown), a honey drizzle, some jam, or enjoy as is.
